Hi everyone! Today we are going to be looking at yet another delicious way for you to cook fish in a way that will have anyone who claims that they hate fish, going back for a second or even third helping!
So, let’s begin by reminding everyone that one of the best ways to hide the taste of fish is by using a fish that just does not taste very fishy… I know this seems like a totally weird concept especially for those who love the taste of fish but for many people the classic “It tastes like chicken” play might be your best bet at getting them to eat something they haven’t had before. Today’s recipe is Roasted Chilli-Lime Cod. The main idea of this dish is to overpower any kind of slight fishy flavour that might occasionally pop up but generally speaking, Cod is a very versatile meat to work with and one of the best things about it, is that it is not very fishy tasting to begin with.
So let’s take a look at what you’ll need:
- 2 Teaspoons Paprika
- 2 Teaspoons Dried Parsley
- 1 Teaspoon Oregano
- 1 Teaspoon Chili Powder
- 1 Teaspoon Garlic Powder
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Salt
- 1/2Teaspoon Freshly Ground Black Pepper
- 1/4 Teaspoon Cayenne Pepper
- 4 Tablespoons Extra-Virgin Olive Oil
- 2 Cod Fillets or however many you need to make for dinner (Available Here!)
- 2 Tablespoon Unsalted Butter
- The zest and juice of 2 limes
- White rice or cauliflower rice for serving
- Your choice of vegetables for serving
Alright everyone, let’s get cooking! First, take your Cod filets and brush them with your 2 tablespoons of Olive Oil. Then in a bowl, combine all of your spices really well to ensure each and every one makes it onto your filets. Once you have applied the rub to each of your filets, refrigerate them for about 30 minutes or all the way up to 12 hours if you are cooking in advance.
Next up, preheat your oven to 450º and place your filets on a pan that has been lined with aluminium foil. Bake for about 10 - 12 minutes.
Finally, In a small saucepan melt your 2 tablespoons of butter along with the remaining 2 tablespoons of Olive Oil. Then add in your lime zest and juice and allow that to cook together for about 2 minutes.
Serve your piece of Cod on top of rice or cauliflower rice and your choice of vegetable and top it all off with a drizzle of your buttery lime sauce.
