This week on the Bonaventure Blog we are going to be working with fish. To be more specific, Cod which is not only a white fish, but also a very light and flaky fish that is perfect for making fish sticks with!
Let’s take a look at what you’ll need for this amazing recipe
- 1 and a ¼ pound of Cod fillets cut into 1 inch strips (Available Here!)
- ⅓ cup of milk
- 1/2 cup all-purpose flour
- Kosher salt and freshly ground pepper, to taste but not much more than a pinch
- 2 large eggs
- 2 cups breadcrumbs (preferably panko)
- 1 cup unsweetened shredded coconut, toasted
- Vegetable Oil
Breading your fish will take no longer than about 20 minutes and is super easy to do. First, begin by cutting your fillets into 1 inch wide strips. Then, combine your strips of fish and your milk in a large bowl and allow these to soak for about 10 minutes.
Next up, you are going to need 3 bowls. The first one will be filled with a combination of your all-purpose flour and your salt and pepper. Your second bowl will have your 2 eggs that have been beaten. Your third bowl will have a combination of Panko bread crumbs and your toasted, unsweetened and shredded coconut.
Now all we have to do is actually bread them. So you’re going to want to start by removing your fish from their milk bath, then you are going to dip your fish into your all-purpose flour, then into your egg wash and then into your bowl of Panko bread crumbs and coconut. Feel free to cut your shredded coconut into even smaller pieces
As you bread them simply place them down onto a tray or a pan for the sake of trying to keep things clean and for organization, but you will see that breading things can get messy pretty quickly.
Finally, in a large skillet, pre-heat roughly ½ an inch of vegetable oil and fry your fish sticks in small batches for about 2 minutes on each side.
Once these have been fried up, there are plenty of amazing side dishes that can be paired with your coconut fish sticks. Various types of coleslaws will pair perfectly with this dish for example. You can also pair these really well with a Mango salsa as well. The possibilities are truly endless since cod is such a versatile source of protein.
