Welcome to spring everyone! Ahhh the snow is melting, the birds are singing and the sun has finally decided to make an appearance, which means that grill season has finally begun once again! This past weekend people everywhere have been taking the dust covers off their grills and cleaning them up for the season ahead. If you are anything like me, jumping feet first into grilling a huge tomahawk steak or anything that is really complicated may not be the first thing you want to make on the good old BBQ. What if i told you that in order to impress, you don’t need to do something incredibly complicated, in fact this super easy recipe should be absolutely perfect for your first grill session of the season!

Let’s make Grilled Scampi but first, let’s take a quick look at what you’ll need:

  • Butterflied Scampi (Available Here!) - The great part of this recipe is that you can make as many or as little as you please! Also, don’t be intimidated by butterflied scampi, this just means that it is already split in half so that the meat is exposed and you can easily prepare them.
  • 1 clove of fresh  garlic that has been pressed or you can always buy already pressed garlic. 
  • 2 tablespoons of olive oil
  • A pinch of both salt and pepper. 

That is honestly all that you need to make this recipe since the grill itself takes care of the rest, so let’s get started!

First, allow your Scampi to thaw. They don’t need to necessarily be room temperature but you really want to make sure that they cook evenly so they should be thawed throughout the whole scampi. Once your scampi is good to go, the rest is super easy to do.

In a large bowl, combine your olive oil, pressed garlic and your pinches of salt and pepper. Give this a thorough stir and then coat each of your scampi in this mixture. If you plan on making a lot of scampi, you will probably have to double or triple your coating mixture.

Once these are all coated, preheat your grill on medium heat for a good 5-10 minutes and then place your scampi meat side down on the grill, meaning that the tails are sticking upwards to you. These really only have to cook for about 3-5 minutes or until you the tails are completely curved upwards and the shell is a bright vibrant red.

Once cooked, these little guys are perfect as a meal or for appetizers. They are also an amazing dish to make if you want to show off a little bit and get to experience a restaurant style meal.
